Curried Samp and Beans

A delicious traditional South African dish cooked with spices and typically served with a tender meat such as our Beef Stew, Oxtail Casserole or Sishebo Beef Curry.

                      Ingredients
- 15ml oil
 - 1 cup beans (soaked overnight & drained)
 - 1 leek sliced OR ½ onion chopped
 - 1 ½ cups samp (soaked overnight & drained)
 - 1 carrot chopped
 - 1 stick celery sliced
 - 1 beef stock cube
 - 3 cups water
 - 1 tbsp medium curry powder
 - 1 teaspoon salt
 - ½ teaspoon pepper
 - ½ tin chopped tomato OR 1 tomato chopped
 - ¼ cup chopped spring onions
 
Directions
- Fry the leeks or onion in a large pot in the oil. Add the carrots, celery and curry powder and fry.
 - Add the drained samp and beans, water, tomato, salt, pepper and cubes and bring to the boil. Simmer covered for 30 minutes.
 - Place the well-sealed pot in the Wonderbag on a cloth and leave for 4 hours.
 - Open, stir in the chopped spring onions, taste and adjust seasoning if needed and serve.
