At this year's Nelson Mandela Day fundraising event, the Wonderbag team will be serving a warming, nutritious soup to guests from our Wonderbags. Our soup is inspired by a Butternut Squash Soup recipe created by Xoliswa Ndoyiya, who served as the personal chef to Nelson Mandela for over 20 years.
Deliciously creamy, this butternut squash soup is a quick and comforting meal.

                      Ingredients
- 1 butternut squash, peeled, deseeded and cut into 1-inch cubes
 - 2 white onions, finely diced
 - 3 tbsp of olive or vegetable oil
 - 1 tsp fresh thyme
 - 500ml fresh cream
 - 4 cups (1 litre) vegetable or chicken stock
 - Oryx Chilli Salt
 
Directions
- Heat the oil in a large pot over medium-high heat.
 - Add the onions and sauté until translucent (about 5 minutes).
 - Add the butternut squash, thyme and stock.
 - Increase the heat to high, and bring to a boil.
 - Reduce heat to medium-low and simmer, covered, for about 5 minutes.
 - Place your lidded pot in the Wonderbag for a minimum of 2 hours to finish cooking.
 - Purée using a hand-blender or food processor.
 - Stir in the fresh cream, then season with Oryx Chilli salt and serve.
